The great sweet wine of the Jerez region comes from the varietal Pedro Ximenez . Made by late harvest, ultra-ripe grapes, further concentrated by sun-drying. It wonderfully enhances out traditional desserts: flan, arroz con leche, pudín de pan or pudín diplomático & is a great accompaniment to our café cubano drinks. Try it paired w/ the volteado de piña, it wonderfully enhances the pineapple spice character of the cake.
